I thought I’d try something new with my beet greens this time, and this is what I came up with.
Tomato, Ham and Beet Greens Penne Pasta
Ingredients:
500g Penne Pasta
2 cloves garlic crushed
1 onion sliced
6 thick slices of ham, cut into small portions (can use bacon)
Beetroot greens (about 5 cups full), cut into 1 inch sections
Basil leaves (about 1/2 cup), torn
1 tin tomatoes
Olive oil
Pepper
Parmesan cheese
Method:
Cook pasta as per packet instructions.
Heat oil in large pan. Cook onion, garlic, ham and pepper for about 3 minutes. Add beetroot greens, basil, tomatoes and cook for another 3 minutes, until beet greens have wilted. Stir through cooked pasta. Serve with parmesan cheese on top.
