One of the most unhealthy dinners turned healthy. The base is made out of cauliflower! And it actually tastes good!
Ingredients:
1/2 Cauliflower Head
1/2 Cup Light Mozzerella
1 Egg
Tomato Paste
Whatever toppings you like!
This pizza has onion, garlic, turkey breast, green capsicum, cherry tomatoes, mushrooms, mozzerella cheese and fresh basil. Use as many homegrown ingredients as possible! I must confess the garlic and fresh basil are the only homegrown ingredients on mine but my vegies are growing fast so will have some more soon!
Method:
Chop up the cauliflower and put into the food processor until it looks like snow. Then microwave on high for 8 minutes. Add 1/3 cup mozzerella cheese and egg. Mix with a fork until all ingredients are binding together. Tip mixture onto an oven tray (spray oven tray first so it won’t stick) and use your fingers to shape it into a pizza base. Put in oven for 10-15 mins at 180 degrees celcius (190 for non fan-forced). Spread tomato paste evenly over base. Sprinkle toppings, including the left over mozzerella over pizza. Put in oven for another 10-15 mins.
